Almond Peach Tart

This is an easy recipe made of natural pastry, such as juicy peaches and sweet almonds. Tinned peaches additionally work a treat. Make use of cream rather than yoghurt, when desired.
Ingredients
- 8 oz plain flour
- 2 oz almonds finely chopped and toasted
- 1 oz caster sugar
- 4 oz butter or margarine
- Pinch of salt
- ¾ pint thick cream, whipped
- 2 oz caster sugar
- ¼ teaspoon almond essence
- 1 x 16 oz can of sliced peaches
- 1 x 7 oz can crushed pineapple a little water to bind the pastry.
Instructions
- Drain fruit well and chill.
- Sieve flour; add almonds, sugar and salt.
- Rub in the butter. Gradually add the water, form into a ball and divide into 3 portions.
- Roll out each portion about 8” round and ⅛” thick.
- Place on a baking tray and bake at 375 degrees until golden brown. Cool and set aside.
- Set aside 8 peach slices and chop up the remainder.
- Whip cream; add the sugar (2 oz) and the almond essence. Set aside one-third of the whipped cream in a piping bag, to garnish the top of the tart.
- Fold the chopped peaches and crushed pineapple into the remaining cream.
- Sandwich the 3 tarts together and decorate the top with cream and the sliced peaches.
