This delicious, attractive, and healthy starter can also be taken as a light meal. However, avoid preparing it very early simply because it is likely to lose its colour.
  • 3 large avocados
  • ½ pint cream
  • Juice of lemon
  • 2 dessert spoons gelatin

  1. Liquidize avocados, Lemon juice and salt and pepper, etc. having been added.
  2. Beat cream and then add to avocado.
  3. Melt gelatin in hot water, after which you can add to the mixture.
  4. Pour into wetted mould.
  5. Refrigerate to set.
  6. (Diced ham, onions, tomatoes, etc. may be added for extra taste).
