An easy recipe with Mediterranean character. It comes in many variations this is an easy start. You can then experiment with saffron couscous, add dried apricots… the variations are limited only be your imagination!
  • ½ pound of beef cut in a big pieces
  • 2 onions chopped
  • ½ cup of olive oil
  • 1spill cinnamon
  • a few allspice grains
  • 1 package cous cous with lemon and mint flavor

  1. Boil water in a saucepan and set aside. (3 – 4 cups)
  2. Cook onion with olive oil into an opened pressure cooker.
  3. Once the onion is softened put the pieces of meat and turn it to all sides until crust is formed.
  4. Pour boiling water into the pressure cooker. Add cinnamon and allspice.
  5. Seal the pressure cooker and when it starts whistle lower the heat to 7.
  6. this is the magic moment: you will need only 20 minutes till the meet is ready!
  7. Meanwhile put the cous cous in a bowl and add the broth from the meat about 1,5-2cm over the cous cous. Add hot water if necessary.
  8. Once the meat is ready turn off the heat and remove the cooker to a cool place.
  9. let the pressure cooker to pull out the steam, then open carefully and add a little salt.
  10. Served in the way of photography garnished with mint leaves. (I didn’t have any so I cut 3 basil leaves from my pot 🙂
  11. Enjoy with a glass of wine!
