Cinnamon rolls, perfect recipe for cinnamon and brioche lovers! Taste it warm with a hot coco or a coffee. Perfect also for a quick snack for school
  • For dough:
  • 75 gr butter
  • 25 gr fresh yeast or 7 gr dry yeast
  • 250 gr milk, at room temperature
  • 100 gr granulated sugar
  • 450 gr flour for brioche
  • some salt
  • For the filling:
  • 50 gr butter
  • 5 gr ground cinnamon or more if U prefer
  • 100 gr granulated sugar
  • 30 gr brown sugar

  1. Melt the butter in a small saucepan over low heat or in a microwave covered with some plastic wrap. Set aside until needed.
  2. Beat the yeast and milk together in a mixer with the hook attachment. Add the sugar.
  3. Add the flour in batches and beat until a dough forms and starts to pull back from the sides of the bowl. Add the butter and salt and continue to beat until the butter is completely absorbed.
  4. The dough should be slightly sticky to the touch but will be easy to work with. Transfer to a bowl lightly brushed with oil. Cover with plastic wrap or a towel and let it rest for 45 minutes to 1 hour in a warm place.
  5. Preheat oven to 180* C (350* F) Fan.
  6. In a bowl, combine the sugar and ground cinnamon.
  7. Lightly dust a working surface with some flour.
  8. Roll out the dough to a 30×40 cm rectangle. Spread the sugar-cinnamon mixture over the dough with your hands.
  9. Roll into a log, starting from the wider side of the sheet of dough.
  10. It is preferable to use a serrated knife to cut roll into about 2 cm slices.
  11. Grease a 24×30 cm baking pan. Place cinnamon buns on baking pan.
  12. Set aside to rise for ½ an hour. Brush with some egg yolk diluted with 1 teaspoon water.
  13. Sprinkle with some brown sugar.
  14. Bake for 10-15 minutes, until golden.
