This is definitely an exceptionally creamy, fruity salad, ideal for entertaining.
  • 2 whole cooked chicken breasts
  • 3 stalks celery
  • 1 large green pepper
  • 2 cups grapes
  • 2 cups canned pineapple chunks, drained
  • 2 green onions
  • 1 cup slivered almonds, toasted
  • ⅔ cup mayonnaise
  • ¼ cup light cream
  • 1 teaspoon salt
  • ⅛ teaspoon pepper
  • 2 tablespoons vinegar

  1. Cut chicken in large chunks using a chef’s knife.
  2. Slice celery diagonally.
  3. Seed green pepper using trimmer; mince using knife.
  4. Cut grapes in half; seed using a paring knife.
  5. Cut pineapple chunks in half using a paring knife.
  6. Mince green onions using a chef’s knife.
  7. Combine chicken, celery, green pepper, grapes, pineapple, and almonds in a large bowl.
  8. Combine onions, mayonnaise, cream, salt, pepper, vinegar; blend thoroughly.
  9. Chill both mixtures separately.
  10. Just before, serving, blend together, while tossing lightly; and serve in lettuce cups.
