One of the simplest homemade cake made by italian in almost every region is the jam tart. This cake it is very easy in execution and very popular among families because it is perfect for a breakfast or as a snack for the kids. The recipe is based on a bottom of shortcrust pastry and a generous filling of sweet jam. You can choose your favorite jam to stuff it or even a chocolate cream. Kids will go mad for that!
  • 150 gr butter
  • 300 gr flour 00
  • zest of 1 lemon
  • 2 medium eggs
  • essence of vanillin or 1 tablespoon vanillin
  • 130 gr of caster sugar
  • 600 g of jam (apricots, cherries, raspberries, plums, … your favorite!)
  • 1 egg for garnish with brush

  1. Prepare the shortcrust pastry by pouring the flour, a pinch of salt and butter still cold in the mixer. Blend until the mixture is sandy looking. Add sugar. Then, shape the mixture with the typical fountain in the center of which you will pour the vanilla essence or a teaspoon of vanilla extract and egg yolks of the 2 eggs. Stir quickly until all the dough is smooth and elastic. Form a ball and wrap with cling film. Let it rest in the fridge for at least half an hour.
  2. In half an hour your shortcrust pastry will be ready to be rolled out. A little secret: To make the shortcrust pastry softer you can add a pinch of baking powder or baking, although the original recipe does not have it!
  3. Preheat the oven to 180 ° ventilation and roll out ⅔ of the pastry into a sheet with a thickness of about 3-4mm to be placed in a low round cake pan about 20 cm in diameter, previously buttered.
