Italian “pasta and beans” is a very tasty dish and very popular in all regions. “Pasta e Fagioli” was the common dish prepared in the houses of farmers and farm laborers that they did not have anything else but the products of their backyard. Being a very popular recipe several versions exist. What we are proposing is substantial, creamy and genuinely tasteful, perfect during autumn. Should be enjoyed hot with a fine glass of red wine and may be sufficient as a single dish.
Ingredients
  • 250 g short pasta
  • 500 g canned borlotti beans
  • 150 g peeled tomatoes
  • 1 liter vegetable broth
  • 50 g lard
  • 50 g bacon
  • 1 onion
  • 1 Carrot
  • 2 stalks of celery
  • 2 cloves of garlic
  • Extra virgin olive oil
  • Salt and pepper to taste

Instructions
  1. Wash and clean all the vegetables. Put in a mixer: carrot, celery, onion and mince all at medium speed for 30 seconds. Without turning off the mixer, add bacon and lard. This time you should increase a little the speed and minced for 15 seconds.
  2. Transfer the mixture in the pot, add ½ cup of extra virgin olive oil and 2 cloves of garlic. Turn on over a medium heat and saute for about 20 minutes. Meanwhile in a saucepan bring abundant salted water to boil, you will need it to cook the pasta.
  3. After 20 min of cooking in the pan, you can add the tomatoes crushing them. Turn and cook for another 10 minutes.
  4. Now add the beans, a ladle of broth and simmer for another 10 minutes.
  5. Pour pasta into the saucepan in boiling water and cook only for 3 minutes, then drain and place in the pot with the ingredients. Add 2 ladles of broth and finish cooking the pasta according to minutes of cooking written on the package, stirring occasionally.
  6. Once the pasta and beans are cooked, add the salt and a little pepper to taste, turn and serve the dish.
  7. You can eat it hot or you should let it rest overnight and eat it the next day at room temperature, it will be even more delicious and flavorful!
