It is rumored that Pavlova was created in honor of the famous Russian dancer Anna Pavlova who toured Australia and New Zealand. The exact origin and nationality of the chef is a point of disagreement for the two countries even today. This dessert is included in the national cuisine of both countries and is never missing from tables as festive Christmas. Of course you can form the meringue in any shape you prefer like heart for instant and celebrate the upcoming Valentine’s day.
  • 150 gr egg white (about 4 egg)
  • 150gr caster sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon white vinegar
  • 500ml whipped cream
  • 1 pound of strawberries

  1. Beat the egg whites with sugar on medium speed. Add the vinegar and continue beating until you have a firm meringue.
  2. Throw the corn flour sifted with a plastic spatula and incorporate the meringue with circular motions. Preheat oven to 100 ° C
  3. On a baking sheet with parchment paper, pour the meringue in circular shape (20 cm diameter approx.) Make a big puddle into meringue (like deep dish) for the filling later.
  4. Bake the meringue for about 1 ½ hour. Once is cooked let it cool completely.
  5. Beat the whipped cream (I used to pour a little bit bitter almond or vanilla extract, it’s delicious!)
  6. Fill the Pavlova with cream and garnish with strawberries. Isn’t a masterpieceor what! If you notice in the photo above I pour a little cherry liqueur.
