This is a basic, mouth watering potato soup, which utilizes a couple of store cupboard ingredients to wonderful result. Furthermore, you can use a few bits of bacon to top on the soup.
  • 11/2 lbs potatoes
  • Chervil or parsely
  • Cream
  • 2 onions
  • 1 pint white stock
  • 1 dessert spoon flour, blend in 11/2 pints milk
  • Salt and pepper

  1. Slice the potatoes and onions and simmer in the stock until soft.
  2. Put the mixture through a sieve or mouli, or in the blender, and return to the stove.
  3. Add flour and milk mixture and bring to the boil, cook till the flour has thickened.
  4. Pour into hot bowls, then add a spoonful of cream, small, crispy bits of fried bread and a generous teaspoon of chopped chervil to each bowl.
