Quiche Lorraine

A French classic recipe, easy to make. Only if you can afford the calories!
Ingredients
- For the pastry:
- 300 gr flour sifted
- 200 gr butter
- 1 egg
- salt (a pinch)
- 2-3 tablespoons iced water
- You will need a special form for tarts
- For the filling: 2 eggs
- 200g. smoked bacon chopped
- 100g. grated emmental cheese
- 1 onion chopped
- 200gr sour cream
- salt, pepper, nutmeg
Instructions
- Mix in a bowl the flour with the salt. Add the butter rubbing it until it looks like crumbs.
- Add water (may need more or less. The dough should not stick).
- Wrap the dough and put in the fridge for half an hour.
- Preheat oven to 190 degrees. Grease the form. Open the dough, place it carefully on the form and bake for 25 minutes.
- Meanwhile, sauté the bacon in a nonstick pan. (do not put oil. It is already very fat by itself) and then sauté the onion.
- Beat the eggs with the cream. Take the pastry from the oven and fill with the cheese first. Save a little bit for later.
- Then add bacon, onion and then the egg with the cream.
- Sprinkle with the remaining cheese. Bake the pie for another 30 minutes til golden brown.
- The Quiche Lorraine served warm. You can serve it with little lettuce and tomato.
- Enjoy it with a white wine such as Riesling or Pinot blanc Alsace.
