A French classic recipe, easy to make. Only if you can afford the calories!
  • For the pastry:
  • 300 gr flour sifted
  • 200 gr butter
  • 1 egg
  • salt (a pinch)
  • 2-3 tablespoons iced water
  • You will need a special form for tarts
  • For the filling: 2 eggs
  • 200g. smoked bacon chopped
  • 100g. grated emmental cheese
  • 1 onion chopped
  • 200gr sour cream
  • salt, pepper, nutmeg

  1. Mix in a bowl the flour with the salt. Add the butter rubbing it until it looks like crumbs.
  2. Add water (may need more or less. The dough should not stick).
  3. Wrap the dough and put in the fridge for half an hour.
  4. Preheat oven to 190 degrees. Grease the form. Open the dough, place it carefully on the form and bake for 25 minutes.
  5. Meanwhile, sauté the bacon in a nonstick pan. (do not put oil. It is already very fat by itself) and then sauté the onion.
  6. Beat the eggs with the cream. Take the pastry from the oven and fill with the cheese first. Save a little bit for later.
  7. Then add bacon, onion and then the egg with the cream.
  8. Sprinkle with the remaining cheese. Bake the pie for another 30 minutes til golden brown.
  9. The Quiche Lorraine served warm. You can serve it with little lettuce and tomato.
  10. Enjoy it with a white wine such as Riesling or Pinot blanc Alsace.
