This simple pate produces an excellent starter for a dining event.
Ingredients

  • 2 oz butter
  • 8 oz chicken livers
  • 2 Tablespoon cream
  • 2 Tablespoon sherry or brandy
  • 1 Tablespoon tomato puree
  • Herbs of choice

Instructions

  2. Melt butter in a frying pan and toss livers until just cooked.
  3. Add cream, sherry, tomato puree and herbs.
  4. Cook gently for a few minutes.
  5. Put into a blender goblet or pass through a sieve and blend until smooth.
  6. Add a small amount of stock to facilitate easy working of blender.
  7. Put in a dish and refrigerate (Can be frozen).
