Stuffed mushrooms make an appetizing attractive side dish. These beauties are the most asked for starter, from customers to family gatherings.
Ingredients
- 1 pound large fresh mushrooms 6 green onions
- ¼ cup butter or margarine
- 1 cup soft bread crumbs
- 1 cup canned crabmeat, flaked 1 teaspoon salt
- ⅛ teaspoon pepper
- 1 tablespoon ketchup
- 1 tablespoon lemon juice
- 3 strips of bacon
- ½ cup cream
Instructions
- Wash mushrooms; remove stems using parking knife; finely chop stems using French chef’s knife.
- Mince green onions using French chef’s knife.
- Melt butter in 8-inch fry pan over medium heat; add chopped mushroom stems, minced onions; sauté 5 minutes stirring with turning fork.
- Stir in bread crumbs, crabmeat; cook 2 minutes.
- Add salt, pepper, ketchup, lemon juice; stir until well blended.
- Stuff mushroom cups with above mixture; place in highly greased bake pan.
- Cut each strip of bacon in quarters using kitchen shears; place the two quarters in a criss-cross fashion on top of stuffing; fasten with toothpicks.
- Pour cream around mushrooms.
- Bake 25 minutes at 400 degrees F.
- Serve immediately.
