Stuffed mushrooms make an appetizing attractive side dish. These beauties are the most asked for starter, from customers to family gatherings.
  • 1 pound large fresh mushrooms 6 green onions
  • ¼ cup butter or margarine
  • 1 cup soft bread crumbs
  • 1 cup canned crabmeat, flaked 1 teaspoon salt
  • ⅛ teaspoon pepper
  • 1 tablespoon ketchup
  • 1 tablespoon lemon juice
  • 3 strips of bacon
  • ½ cup cream

  1. Wash mushrooms; remove stems using parking knife; finely chop stems using French chef’s knife.
  2. Mince green onions using French chef’s knife.
  3. Melt butter in 8-inch fry pan over medium heat; add chopped mushroom stems, minced onions; sauté 5 minutes stirring with turning fork.
  4. Stir in bread crumbs, crabmeat; cook 2 minutes.
  5. Add salt, pepper, ketchup, lemon juice; stir until well blended.
  6. Stuff mushroom cups with above mixture; place in highly greased bake pan.
  7. Cut each strip of bacon in quarters using kitchen shears; place the two quarters in a criss-cross fashion on top of stuffing; fasten with toothpicks.
  8. Pour cream around mushrooms.
  9. Bake 25 minutes at 400 degrees F.
  10. Serve immediately.
