Rice pudding with coconut milk

Cool version of rice pudding
  • 100 gr rice
  • 1/2 liter of milk
  • 1/2 liter of coconut milk
  • 250gr wiped cream
  • 1 or 2 star anise
  • 60g brown sugar
  • cinnamon for sprinkling
  1. Put plain milk with coconut milk and cream into a saucepan.
  2. Once it starts to boil add the rice and stir constantly on low heat.
  3. After a while add anise and stir again. It needs to be boiled about 15 to 20 minutes till thickens.
  4. Finally add the sugar.
  5. Put in a large bowl ice cubes and put inside another bowl empty.
  6. Once the pudding thickens, remove from the heat, remove the anise, pour it in the smaller bowl and then stir until completely cooled. With this technique, the pudding will not form crust.
  7. Put it in bowls and sprinkle with cinnamon. If you want to decorate it use star anise and a bit of cinnamon.
  8. It can be served warm or cold from the fridge.
